Named after the “monks head” it resembles, Tête de Moine is a semi-firm cheese made from cow’s milk. It is a very intensely flavored Swiss mountain cheese, strongly beefy. The occasional fissure appears in the dry, brownish flesh. The rind is washed and somewhat pebbled.
