After exhibiting at hundreds of wine and food festivals every year, we have acquired firsthand knowledge of the types of cheeses women enjoy. Whereas the majority of men seem to prize bold, assertive cheeses such as Cheddar and Gouda, it hasn’t escaped our attention that the ladies prefer subtler, more delicate flavors. The four cheeses we have selected for our Ladies’ Cheese Assortment are undoubtedly among the most popular we have served nationwide. Four countries are represented, as are three varieties of milk and a whole host of unique flavors.
- White Stilton with Mango and Ginger: Our favorite White Stilton variety, the tropical mango and exotic ginger flavors set this delightful cheese apart. Serve it chilled after the meal with a delicate dessert wine. (8 oz)
- Regina Blu: An extravagantly creamy and deliciously supple blue cheese from Bavaria. This German cow’s milk blue is easy to cut and is delicious spread or melted over steak, crackers, or potatoes. (8 oz)
- Malagon with Rosemary: A specialty from the La Mancha region of Spain, this Manchego-type cheese is covered in fragrant rosemary. The rosemary impregnates the ewe’s milk cheese with an unmistakable herb flavor that perfectly complements the nutty sweetness of the Manchego. (8 oz)
- Murcia al Vino: Similar to the Spanish wine cheese, Drunken Goat, this wine-bathed cheese is made from pasteurized goat’s milk in Murcia region of Spain. The wine deeply tints the cheese, giving the rind its characteristic burgundy color and imparting a strong floral bouquet. (8 oz)

England is a land well suited to dairy farming. Its territory is relatively flat, thus good for grazing, and it has plenty of rainfall. This country produces over 500 distinct types of cheese, including the four we are featuring in this English Cheese Assortment.
- Denhay Mature Cheddar – Arguably the world’s most famous cheese name, Cheddar is an authentic English cheese that has been copied all over the world. If you have never tasted authentic English Farmhouse Cheddar, you are in for a wonderful surprise. Aged at least 11 months. (8 oz.)
- Royal Blue Stilton – How could such an assortment not include England’s beloved blue cheese? Creamy, tangy and eminently satisfying, our Royal Blue Stilton is perfect as a snacking cheese or as an ingredient. (8 oz.)
- Sage Derby – Don’t be afraid of the green! Pulverized sage leaves are mixed with water then added to the curd of Derby cheese to create this striking example of English cheesemaking ingenuity. A mild and herbaceous cow’s milk cheese, Sage Derby is the ultimate party cheese. (8 oz.)
- Cotswold – Also known as “Pub Cheese,” Cotswold is the name given to this hearty cheese that combines orange Double Gloucester cheese with flavorful bits of chive and onion. A harmonious blend of mellow, crumbly cheese and powerful vegetables, Cotswold is a terrific complement to the softer, more mild flavors on your cheese board. (8 0z.)

Pull out these cheeses from the refrigerator after dinner to let them warm a bit. Get your new wine glasses, open a nice red, find some crackers, and either put out grapes or get an apple ready to slice. This is our dessert, or bed-time snack, whichever comes last.
I chose this pack because I like a variety of cheeses on the cheese plate. I absolutely adore Royal Stilton, whose flavors inform your taste buds you are in the company of bleu cheese but do it softly, gently, just a kiss of that flavor. I repeat: Oh, how I love Stilton! I love both its aroma and its flavor. Take a big swirl of that spicy red and you are heaven-bound right now!
I always thought the Germans, the French, the Swiss, the Swedes had the market on cheese until I met the English cheddars. The Farmhouse Cheddar is nothing like an orange cheddar. It’s mild and smooth. Its opposite is Sage Derby–herbaceous and fresh. While one lulls you, the other jolts you, each in a pleasant way.
And last on our plate is the Lancashire, a dry, crumbly, old, old English cheese. You might need a spoon to gather up all this goodness because it will come apart upon being cut.
A wonderful pack of cheese! A great gift idea! However, I suggest you consider the explorer, the adventurer among your friends and family, as three of these cheeses are not your American Swiss cheese or cheddar and might not be a welcome gift. But for one who wants to experiment, what a welcome gift!

Different milks, a diverse terrain, and unique cheesemaking techniques all play a role in the subtle differences in each cheese’s color, texture, and flavor. - Idiazabal – Smooth, rich and satisfyingly sharp, Idiazabal is a smoked sheep’s milk cheese that gives off a warming rustic scent. It is the quintessential cheese of the Basque country in Northern Spain.
- Murcia al Vino – This 100% goat’s milk cheese from Murcia is bathed in red Spanish wine, making this product a wine-and-cheese party all by itself!

We loved the assortment of cheese and it was finished is more than we expected. The quality is excellent – the Manchego brought us back into the wheel of cheese that we bought our honeymoon! Perfect with some pecans in honey. We would definitely buy this again.
The complaint is that it was pretty warm when we get it. It was a mild day, but not hot, and I'm worried that the cheese would have melted on a hot day, or if the field had been in the sun for longer than he was.

Black Castello scooped a gold medal at the World Cheese Awards 2007 held recently in connection with the International Food & Drink Exhibition in London, and deservedly so. A great addition to the Castello line of premium soft-ripened cheeses, Black Castello is Tholstrup’s first Castello cheese made from both cow’s milk and sheep’s milk from Denmark, with special ripening cultures from Southern Europe. Unlike most other blue mold cheeses where surface molds are washed and removed, Tholstrup chose to maintain blue mold on the cheese’s outer fleurie. The result is a distinctive, bold blue cheese with a creamy, supple texture. Sure to become a new favorite for our blue cheese fans.

On our last trip to Holland, one of our Dutch suppliers informed us that Holland is the one of the most densely populated countries in Europe. This fact, combined with the fact that thirty percent of the land in The Netherlands is under sea-level, makes organic agriculture particularly vital for this country, considering that traditional agriculture is one of the biggest polluters of inland waterways. This cheese is very similar to our Farmer Gouda in type, age, and flavor. It is, however, made from organic milk, sourced from cows that are not given any antibiotics, hormones, or growth factors. They graze on fields and eat grains that have not been treated with chemical fertilizers, herbicides, or pesticides. The natural goodness of the Dutch countryside shines through in the resulting cheese.

Feta is the national cheese of Greece, and surely the best-known Greek cheese in the US. Our Barrel-aged Feta is produced from December through April from a blend of all-natural milk from free-range sheep and goats, whose milk is richer than cow’s milk in calcium, vitamin B and proteins. Curd is molded in large round forms, which are hand-turned frequently as they drain. As the whey drains, the cheese-crafter adjusts timing to perfect each form’s texture. After skillful dry-salting, wheels are placed in birch barrels for aging and preservation. There they sit in a 7% brine solution that originally allowed farmers to preserve their milk in the hot Mediterranean climate. Today that brine gives feta its characteristic tang.
By the end of the four-month maturation, a wonderfully creamy, rich, complex flavor is fully developed. The care that goes into this feta is evident by its incredible characteristics. Its traditional method of production contributes to its full taste, natural aroma and pure white color, properties which have established Feta over the centuries as a unique natural cheese of Greece.
Enjoy this premium feta in a traditional cheese pie, over eggs, stuffed into squash blossoms, or even fried. Or just relax with a slab of feta drizzled with olive oil and garnished with fresh oregano. Opa!

Provolone is a northern Italian cheese that can be thought of as Mozzarella’s older brother. Take some Mozzarella, form it into your favorite shape, and rub it down with brine, bind it with rope and hang it from the ceiling for a few months and Voila! – you have just made Provolone. There are two varieties of Provolone. Dolce (meaning sweet) is the mild version and Piccante (meaning sharp) is its spicy, more aged counterpart. We love this Piccante version, which is rarely available in the U.S .and much more interesting than the mild Provolone most Americans have come to know. One of the great sandwich cheeses, Provolone Piccante is also an excellent melting cheese that is perfect in omelettes or atop a toasted baguette.
